旅游和酒店教育的变革时机
过去30年来,旅游和酒店教育的教育家一直尝试找到最佳的实践教育模式。从极强的职业基础课程,转向更加注重管理而非运营技能的学术化课程。
大学和私立学院越来越趋向注重提供理论与实践相结合的旅游和酒店业课程。John Tribe在2011年CAUTHE上发表主题演讲,他重点点明人们在酒店研究和教学的碌碌无为,鼓励学者将实践因素带入大学课堂,确保学生不仅仅学习如何成为酒店经理,而且还要在毕业时实际服务过顾客或端过盘子。
2011年,香港理工大学(Hong Kong PolytechnicUniversity)开发了一个价值1亿美元的五星级酒店,作为学校酒店专业学生在学习期间获得实践经验的培训设施。他们的课程中除了包括实践培训外,一些机构如蓝山国际酒店管理学院还开发出创新性方法,就是通过与酒店行业的关键行业伙伴形成战略联盟,来确保行业需求通过专门设计的课程项目得到满足。
显而易见,旅游和酒店行业的教育家面临的主要挑战是通过创新教学法和应用研究找到实践和理论课程的正确平衡,来满足行业需求,并为学生创造可持续性职业生涯。2012年第3学期,校长SharonMoore和副校长Edmund Goh进行了一天的餐饮、前台和客房培训,加强他们的应用教学法的知识。职责包括制作无酒精鸡尾酒、咖啡,餐桌服务、客房部早班任务、房间检查、顾客入住登记和退房等。

CHANGING TIMES INTOURISM AND HOSPITALITY EDUCATION.
Over the last 30years Educators in Tourism and Hospitality education have been trying to findthe best practice education model. It has moved from a strong vocationalfoundation to a more academic discipline with the curriculum focusing more onmanagement rather than operational skills.
There is anemerging trend among Universities and Private Collegesin emphasizing the importance of both practical and theoretical components intourism and hospitality tertiary courses. In a keynote speech at CAUTHE, 2011,Professor John Tribe highlighted the mediocrity in research and teaching inhospitality and urged academics to bring back practical components into theclassrooms of universities to ensure that students are not simply studying tobecome future hotel managers without actually having served a customer orcarried a plate upon graduation.
In 2011 Hong Kong Polytechnic Universitydeveloped a $100m fivestar hotel as a training facility for their hospitality students to get handson experience during their studies. Besides including practical training intheir courses, some institutions such as The Blue Mountains International HotelManagement School have developed creative solutions by forming strategicalliances with key industry partners in the hospitality industry to ensure thatindustry needs are met through well designed programs.
Clearly, the mainchallenge facing educators in the tourism and hospitality industry is findingthe right balance between practical and theoretical curriculum throughinnovative teaching pedagogy and applied research to meet the needs of industryand to lead to sustainable careers for our students. In Term 3, 2012, both Headof School, Sharon Moore and Deputy Head of School, Edmund Goh went through aday’s training in Food and Beverage, Front Office, and Housekeeping tostrengthen their knowledge in applied pedagogy. Duties included making mocktails, coffee, serving tables, food preparation, housekeeping morning exercise,room inspections, check in / check out, etc……
